Enjoying my weekends!

I really liked my weekend. I got to spend a lot of time with my hubby and the girls.  Preston and I ran errands on Saturday which included new walking shoes for me. Lunch at our favorite place.

We came home to the gang outside in the backyard enjoying the sun and reading.  Then off to Costco for three of us. Then a quick trip home to change out people and then headed to a Summer Bash with great music. I was able to knit while listening to awesome music.

Sunday was the typical go to church, but then had lunch with friends J and T. We don't see them enough. I am hoping with Preston's change of schedule we can spend more time with them. Then we did the Angel Food attempt. First one was with Banana flour, this is not a good use of the flour.  Scored a -10 and immediately went into the garbage. The 2nd one was with some other gluten free flour, it was good but not my best. The flour was old and now I will get fresher and try again.

Also I woke up this morning to find that the niece of my heart has made her debut! I cannot wait to snuggle this one next month. It seems so weird not to be there for her birth.

Three things Thursday

1. I woke up early this morning and dragged myself to the dmv to renew my license. So glad that is over.
2. Hubby was downtown today visiting his mom and stopped at the gluten free bakery and got me goodies which he delivered to my office with a coffee.
3. I put some effort in and have only a few rows left on the second sock, which should be completed in the morning.

Weekend prep

Today I got ready for the weekend. I got stuff to make cupcakes and I cast on the 2nd cuff. I also cleaned the kitchen to inspire me to actually make the cupcakes. I really enjoyed the gf yellow cake mix by king Arthur flours and looking forward to trying their gluten free chocolate cake. Amy has also been craving cupcakes. Let the weekend begin.

Anniversary Dinner

Tuesday was our 14th wedding anniversary.  I can't believe how fast the time has gone.  We believe in making the most of our anniversary and celebrating it in little ways over the course of September through the first week of October.  But on the night of our actual anniversary we did have a really nice meal at the local Indian restaurant that we were taken last week by our friends. We tried several new dishes this time.

Onion Bhaji-my favorite from last time

Gluten Free Bread (Naan but they call it something else)

Bombay Paneer

Chicken Coconut Kurma

Delicious Rice

Kheer

This was the most delicious meal and now I can't wait to go back.  We did have a chuckle as we had the same waiter as last week but this time he told as about the gluten free bread, which was heavenly.  He did apologize for not telling us last week.  We immediately text our friends about it and they went up there today and enjoyed it.  I think I can talk hubby into going for it soon.  Mom is always up for an adventure and so is Dad...so maybe one day soon!

Walking in the woods and other fun stuff

The sunday of Labor Day we took a walk with my MIL and her sister who came to visit us during our camping trip. We took a little walk to Lake Fehr. It was so beautiful.

Hubby got better pictures and I only took a few.  But it was so beautiful and green.

On Saturday, September 10th Hubby and I took another hike up Millcreek canyon. This time we went to the left and walked on Old Red Pine Road Trail.

It was a beautiful walk and sorta steep in places.   But what we notice was the slight yellows in the leaves and under brush.  The deep greens were still there but there was a hint or two of fall if you knew where to look.

As you can see there was a little a bit of water around the trail. We had to cross the river four times. The first time I did really well. The second time my foot slipped and got wet so then I gave up and just walked through the river the rest of the time.  It was a lot of fun but my shoes got really muddy.

On Sunday, after church we took a drive up the mountains. First we drove up Lamb Canyon which is on the way to Park City.

We stopped at the top of the canyon and took some pictures.  It was a pretty canyon but a tight drive so we probably wont drive this one much. We head to Park City and on the other side of Parley's Summit you could see two trees changing to red/orange. I couldn't get a good picture of them.

We drove through Park City, got out at the top of Main Street and walked through a few store. Then headed back to Kimball junction for some gluten free food,  And we found it at a pizzeria.  I had cheesy garlic bread and gluten free meatballs. So yummy. I only got a photo of the bread.

I can't wait to go back and try the pizza. Or maybe a grilled cheese sandwich.  So what did you do on your weekend?

Lasagna....hmmmm

Last night Mr80grit made gluten free lasagna.  He doesn't know how to make for a family of two. Nope he made enough for an army.

It is a good thing I like lasagna.  We put several meals in the freezer for later.  Yummy.  Yes, he did use a turkey roasting pan to make it.  It took put the top shelf of our frig.

Food, of Course!

Thursday night was dinner at home, but first Mr80grit had me stop at the store to pick up Udi's gluten free pizza crusts. When I came home he roasted mushrooms in the oven with olive oil and italian seasons. Yummy!
Then we put the wonderful mushrooms on the pizza....wow! I can't wait to have the leftovers this afternoon!
We did put a little cheese on the pizza when we baked it.  It was a magically experience.

Fish and Chips

A few weeks ago, I read a blog review of a new frozen gluten free product.  It was for battered fish or fish sticks.  My mom had just mentioned that they were having fish sticks for dinner.  While I had tried another brand of gluten free fish fillets or sticks, I hadn't been impressed. Then a read a review about Starfish Gluten Free products, did a search and found they were in my local grocery store.  I told forgot to mention this to Mr80grit as he is always looking for a quick easy meal for us on our busy days. Then last week he found these all by himself. So last week we tried the Halibut which was good and tonight was the Cod. Both were good but our preferences was for the halibut.
But I have to say I was just excited for something to taste like I remembered when I ate gluten.  I liked that the batter had a good flavor on its own and was light and not heavy.  It pair great with french fries. Sometimes the comfort food of the past can make my day, even battered fish.  So instead of a Irish meal for St. Patrick's day, we ended up with an english meal of fish and chips.  But we are okay with that today.
